Ingredients

  • 1 cup (125g) all-purpose flour
  • 2/3 cup (130g) granulated sugar
  • 3 large eggs, at room temperature
  • 1/2 cup (115g) unsalted butter, melted and cooled
  • 1/4 cup (60ml) heavy cream
  • 1 teaspoon vanilla extract (or zest of 1 lemon)
  • 1/2 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Whisk eggs and sugar until pale and fluffy.
  2. Fold in cream, vanilla, and melted butter.
  3. Sift in flour, baking powder, and salt; mix gently.
  4. Chill batter for 1 hour or overnight.
  5. Preheat oven to 375°F (190°C). Grease and flour Madeleine pan.
  6. Fill molds 3/4 full with batter. Bake for 10-12 minutes until golden.
  7. Cool in pan for 2-3 minutes, then transfer to a wire rack.
