Ingredients
- 1 cup (125g) all-purpose flour
- 2/3 cup (130g) granulated sugar
- 3 large eggs, at room temperature
- 1/2 cup (115g) unsalted butter, melted and cooled
- 1/4 cup (60ml) heavy cream
- 1 teaspoon vanilla extract (or zest of 1 lemon)
- 1/2 teaspoon baking powder
- Pinch of salt
Instructions
- Whisk eggs and sugar until pale and fluffy.
- Fold in cream, vanilla, and melted butter.
- Sift in flour, baking powder, and salt; mix gently.
- Chill batter for 1 hour or overnight.
- Preheat oven to 375°F (190°C). Grease and flour Madeleine pan.
- Fill molds 3/4 full with batter. Bake for 10-12 minutes until golden.
- Cool in pan for 2-3 minutes, then transfer to a wire rack.
